Green Goddess Pizza

For those of you who love making pizza thanks to the fabulous Thermomix dough this is something a little different.  The salty Kalamata olives and the sweet creaminess of the avocado are a great combo.

I used 1/2 a quantity of pizza dough (EDC recipe) we used the other half the day before.

1 avocado
1 garlic clove
1 handful of fresh thyme
salt and pepper to taste
10-12 Kalamata Olives
100-150g cheddar cheese

Grate cheese and garlic clove on speed 7 for around 4 seconds, set aside.

Mash avocado with salt and pepper - I did this in a small bowl.

Roll out the dough and spread with the avocado mixture - you could add a tablespoon of pesto too.

Smash up the olives and dot around evenly.  Sprinkle with cheese and garlic mix and top with thyme leaves.

Bake for 12 minutes on a baking paper lined tray.  I put this on top of my pizza stone in a well pre-heated, very hot oven.  I have tried transfering pizza to stone with much phaff and find this works just as well.  I intend to buy one of those wooden paddles very soon.

This was a hit with the small tomato hater...ironically the same tomato hater that loves ketchup...

Good little lunch or quickie dinner on a Friday night with a cold beer.  You could throw a handful of baby spinach or rocket over it when you take it out to posh it up a little.

  2. Thanks for dropping by my blog. Lovely to discover another Thermomix lover. I put my pizza on baking paper before I put the toppings on and then after adding toppings lift it onto the hot pizza stone. Works perfectly for me.
